JOB SUMMARY: Responsible for managing and leading kitchen personnel, ensuring the quality preparation of menu items and proper handling of all food items. Coordinates sous chefs in purchasing all food and kitchen products. Helps maintain food and labor costs. Leads sous chefs in all meal periods and banquet functions.

 

BASIC SCOPE AND FUNCTIONS OF POSITION:

 

  1. Basic knowledge of health department requirements

 

  1. Maintaining a clean, safe and sanitary workplace

 

  1. Menu creation/development

 

  1. Pricing menu items and food cost

 

  1. Ordering food items

 

  1. Ordering plates/silver/some nonfood items

 

  1. Preparing schedules and enforcing employee hours

 

  1. Serve as liaison between Executive Chef and kitchen employees

 

  1. Assist in hiring process/reviews

 

  1. Ability to make decisions in regard to future of kitchen as well as day to day operations

 

WORK PERFORMED:

 

Keeping an active line of communication between executive chef and kitchen employees.  The executive sous chef needs to be able to communicate freely with sous chefs and kitchen station "leads".  This is necessary to prepare prep lists, order and to also ensure that all kitchen equipment is operating properly.  This line of communication must happen several times per shift.  Constant supervision of employees and sous chefs to make sure they have necessary tools to do their jobs successfully.  Must be willing to work alongside kitchen stewards to help maintain a clean and sanitary work environment.

 

QUALIFICATIONS:

 

  • Two-year degree in RHM or equivalent
  • Minimum of 5 years' experience in food service
  • Excellent understanding of various cooking methods, ingredients, equipment and procedures
  • Accuracy and speed executing assigned tasks
  • Familiar with current industry techniques and practices
  • Must be able to walk or stand during entire shift
  • Must be available to work flexible shifts and overtime if necessary
  • Must be able to lift up to 50 lbs.
  • Must be able to push and pull up to 50 lbs.
  • Must be available for emergency and scheduled work requirements on evenings, weekends or holidays
